Thai celebrity chef shares special recipe for fried fish

Thailand, the Land of Smiles, has a cuisine renowned for its simple but complex flavors due to its strong aromatic notes. While Thai food is known for its spiciness, it also follows other Asian cuisines in its fundamental components, a balance of sour, sweet, salty, and bitter flavors.  
Pla Raad Prig Daeng (Mandarin Oriental)

Exclusive to SHE, Celebrity chef and Mandarin Oriental Bangkok’s Executive Sous Chef Sumet Sumpachanyanont, shares a special Thai recipe: fish with red chili sauce and green pepper corn and vegetables, also known as Pla Raad Prig Daeng. Learn how to balance all four components in this easy-to-make, delicious dish.
Ingredients
5 g chopped big red chili (seedless)
5 g chopped small garlic
4 g chopped pickled garlic
2 g crushed bird’s eye chili
22 g cooking oil
23 g oyster sauce
15 g fish sauce
1 g white pepper powder
1 g white sugar
66 g chicken broth
150 g Garoupa
10 g shredded boiled sweet pea
10 g shredded carrot
2 g sweet basil leaves
2 g green pepper corn
1 pc shredded kaffir lime leaf


Method
- Sprinkle a bit of salt, pepper and wheat flour on Garoupa and deep-fry until cooked. Set aside
- Heat cooking oil in a wok then add garlic, chili and pickled garlic. Stir-fry until fragrant.
- Season with fish sauce, oyster sauce, sugar and white pepper powder and chicken broth. Keep stirring until the sauce thickens. Set aside.
- In another wok, stir-fry garlic and add sweet pea, carrot and sweet basil. Season with a bit of fish sauce and then put on a platter.
- Place the fried fish on the vegetables and top them with the sauce.
- Garnish with green pepper corn, shredded kaffir lime leaves and sweet basil sprig before serving.
