Make your own lemongrass-infused popsicles

While it’s started to rain, we’re still sweating buckets because of the heat and humidity. Cool down with these light, refreshing and palate-cleansing frozen treats. To add a different dimension and flavor, mix in several lemongrass leaves to the syrup. Make them the night before and enjoy them at the peak of heat the next day!

First, make the syrup:

Lemongrass-infused Sugar Syrup

  1 cup sugar
  1 cup water

Dissolve sugar in water. Add lemongrass and let it boil. Stir constantly. Turn off heat. Remove lemongrass leaves and let the syrup cool.

Then, add it to these popsicle flavors:

Calamansi and Lemongrass Popsicle
  2 cups calamansi juice
  1 cup lemongrass-infused sugar syrup*

Combine calamansi juice and syrup together. Pour onto popsicle molds. Freeze overnight.

Lychee and Lemongrass Popsicle

  1 can lychee
  ½ cup lemongrass-infused sugar syrup*

Puree lychees in a blender and pass through a sieve several times. Make sure all bits are removed. Combine with syrup. Pour onto molds and freeze overnight.
